Mimosas for everyone!!!

Since it's Monday, and I've surprisingly had a relatively productive morning, I thought there'd be no better way than to start off the week with a blog!

Bryan and I have been making great progress these last few weeks and so far, we aren't experiencing any kind of stress at this point (although I'm sure as the numbers get larger on the check we write, our blood pressures may slowly creep upwards). Yesterday marked an event I was really looking forward to, the Winter Tasting at the Payne-Corley House. I am always excited to go to PCH just because I love it so much. It actually relaxes me to be there, it's such a warm atmosphere. But I was even more excited to get to try some of the food we will be considering for our final menu options.

The day started off, however, as rainy and chilly. This is the 4th visit Bryan and I have had to PCH and for 3 of them (including yesterday's), it has rained! It is safe to say I am convinced it will rain on our wedding day. So if you're coming, don't say I didn't warn you.

As we entered, our coats were taken and we were given a booklet with the food selections included at each station. Bryan and I did what we do best: we headed to the bar first. Mmmm, mimosas! With mimosas in hand, we headed to the fruit and cheese display, something we're strongly considering including during our cocktail hour. The cheeses were absolutely delicious (ok, so I didn't take the healthy route and pick up a bunch of fruit, but I love cheese!) Then we went to the salad station which had a Mediterranean vegetable ratatouille (awesome), an apple salad (surprisingly good), and a roasted tomato salad with goat cheese (two of my favorite things). We also headed to the carving station where we were able to get samples of the beef tenderloin and cajun-rubbed pork tenderloin. Finally, we tried what turned out to be our favorite dish of the day: pecan-crusted chicken with vanilla sweet potato mash. Absolutely incredible, that dish will definitely make an appearance on our menu. In addition, as we were sitting eating what we had managed to take on our plates, we were also being treated to passed hors d'oeuvres: diver scallops wrapped in smoked bacon topped with red pepper coulis (can you tell this was my favorite?), herbed goat cheese profiterole, bruschetta, asian chicken satay with thai peanut sauce, and crab cakes.

We were also doing our share of wine sampling - with only our guests' best interests in mind, someone's gotta do this stuff!

Finally, we came to my favorite part of the day. Because Bryan and I selected an all-inclusive package with PCH, our wedding cake will be provided from one of three bakers they work with (all of whom displayed beautiful work and delicious treats!). Each bakery provides over 20 options to choose from that are included (with upgrade options if you so choose). The cool part about this is we can choose based on taste and design alone without worrying about cost (since essentially we're already paying for it). So we made our rounds, sampled from each of the bakeries, and ultimately decided we liked Celso's Cakes the best (although the others were excellent as well)! We did manage to choose some finalists from the book of options as well, but we have yet to make everything official in terms of what flavors will be included and the like (I'm all about basics on the cake front, but willing to throw in a crazy flavor in one of the tiers!).

There is plenty more on our agenda this week (I'd ask if this ever ends, but it is really fun). Our next task is to make an appointment with the florist. I've also got a list a mile long of other vendors we need to touch base with: ceremony musicians, transportation for bridal party, hotel accomodations for guests, rehearsal dinner sites, etc. But first things first, next weekend will include a Bridesmaid Day Out for my in-town girls (next month I will get to see my out-of-town girls!) and Sunday our goal is to finish out these registries because, as Bryan pointed out, "There is no football next week, so I will have time". Thanks, honey.

Hopefully this blog will hold everyone over for the week. I'm off for a 5-mile run (wedding dress shopping is rapidly approaching) then back to work! Have a great week, everyone!
